Join British Champion Master Butcher Stephen Hill and Carl Norton for an unforgettable evening of steak mastery. From the very start, you'll dive into a hands-on experience with a carefully selected range of British steaks. Using Weber equipment, you'll learn how to cook your steak perfectly and pick up expert tips and tricks from the pros.
Stephen and Carl will guide you through a feast of BBQ classics with exciting twists, exploring both direct and indirect cooking methods. You'll gain confidence to control heat and timing like a professional, and learn the core philosophy of charcoal barbecue.
Throughout the evening, you'll practise essential grilling skills including seasoning, achieving the perfect sear, and controlling timing and temperature. You'll also learn how to choose sustainable, locally produced steak.
Recipes and topics covered include: understanding different types of steaks, the importance of meat choice (British Heritage breeds such as Dexter, Angus, Hereford, and Shorthorn), factors that affect flavour, and cooking techniques for perfection using direct and indirect heat.
Techniques include: provenance and sustainability, direct vs indirect BBQ cooking, combining sweet and savoury flavours, mastering the perfect Perrys steak, identifying steak varieties, and seasoning techniques.
The course runs from 5:30 pm to 7:30 pm, with refreshments available from 5:15 pm. Aprons, equipment, and ingredients are all provided. No prior experience is necessary. The course will only run with 6 or more participants. Please advise of any dietary requirements or allergens prior to booking.
